heyy guys! Mehtaab here so today i decided i would post something different. A 'jaffa cake' cake. I made this for one of my uncles as he loves jaffa cakes and he wanted a plain sponge cake. So for this cake i made about 15 ounces of cake mixture. i used three tins/moulds. This cake was a plain sponge cake and everyone liked it.
these are the two cake moulds i used for the base i used a smaller tin for the jaffa cake
ingredients:
16 ounces of butter
16 ounces of sugar
16 ounces of self raising flour
8 eggs
3-4 table spoons of water
1 tsp of baking powder
apricot jam
2 packs of chocolate
orange jelly mix(but I used mango because I couldn't find
orange)
orange matchmakers
10 pods of mini Jaffa cakes
I bought some vanilla butter cream but you could also make
your own
method:
1. first
of all cream your butter and sugar together then add your eggs one by one add
your water in this step and whisk together
2. after
that add your flour and baking powder and fold it in
3. once
you have mixed it separate the mixture into the 3 moulds/tins and put it in the
preheated oven, at 180 degrees c
4. whilst
waiting for the cake to be made make your jelly
5. after
about half an hour insert a knife or a skewer and it should come out clear
6. take
the cakes out and leave them to cool once they have been cooled spread the jam
onto the bottom layer of the cake and then place the top cake on and spread the
butter cream across the side of the cake and the top
7. on
the small cake you made tip the jelly onto the cake and melt the chocolate
8. once
the chocolate is melted keep mixing it but let it cool down otherwise when you
put the chocolate on the jelly it will come off
9. spread
the chocolate over the jelly and carve in a knots and crosses grid
10. place
the Jaffa cake onto the main cake
11. place
the mini Jaffa cakes along the side of the cake and crush the matchmakers or
break them into small pieces and sprinkle them around the Jaffa cake
12. to
finish it off you could place 3 Jaffa cakes on the big Jaffa cake
